Ingredients
Pinch of Nom x Flava It! Mediterranean-Style Traybake recipe mix
600g chicken
250g orzo
1 onion, diced
1 carrot, diced
1 celery stick, diced
500ml water
4 mushrooms, thickly sliced
1 handful of cherry tomatoes
1 lemon, juiced
low-calorie cooking spray
fresh parsley to serve (optional)
Instructions
- spray a pan with low-calorie cooking spray and cook the chicken until almost brown. Remove the pan and set aside.
- Add the onion, carrot, celery, and mushrooms to the pan and cook until soft.
- Add the tomatoes and lemon juice. Add the chicken back into the pan and sprinkle the contents of this sachet. Add 500ml water. Mix well. We suggest cooking in the oven, covered for 30-35 minutes at 180 degrees.
- Add in the orzo, stir, and return to the oven for a further 20 minutes (uncovered), until cooked thoroughly.
- When the orzo is tender, sprinkle with the parsley, if using. Serve and enjoy!
