BBQ Chicken with a Mexican Veg & Quinoa Salad

Ingredients
Chicken breasts
Half a red onion
A handful of coriander
1 Bell pepper
1 bag of Quinoa
1 Lime
1 tin of Sweetcorn
Half a tin of Kidney Beans
FLAVA IT Smoky BBQ
Instructions
- Sprinkle Flava It BBQ and rub onto chicken breasts, before cooking on a lined baking sheet in the oven until cooked through
- In the mean time, chop 1 bell pepper, half an onion, a handful of coriander and place into a large mixing bowl
- Cook the quinoa in the microwave before adding to the large bowl, along with a sprinkle of tinned kidney beans and sweetcorn
- Mix the veg and quinoa well with your chosen salad dressing
- Place the chicken with your quinoa salad and finish with a fresh lime wedge
